Hello everyone!
I have a couple of friends that don’t like cauliflower which blows my mind because cauliflower is one of my favorite vegetables. You can do a lot with cauliflower; You can steam it, boil it, bake it, bbq it and now you can make cauliflower pizza crust! My favorite thing to make with cauliflower is cauliflower mashed ‘potatoes’. I was the queen of mashed potatoes growing up but when you’re 10 years old, you don’t know what “bad carbs” are. I rarely eat mashed potatoes now but when I want a healthier alternative, I make cauliflower mashed potatoes. This recipe is super easy to create, it is vegan friendly and it is perfect for those on a strict no carb diet.
Note: there are no potatoes in this recipe. I told my uncle I made mashed cauliflower for Thanksgiving and he said that sounded gross.. So that’s why I call it cauliflower mashed ‘potatoes’.
You will need:
- 1 cup of unsweetened Almond Milk
- 1 tsp of olive oil
- a spoonful of minced garlic
- salt and pepper
- a blender
- a head of cauliflower
*if you are allergic to nut products, use soy milk or hemp milk
Step 1: Cook Cauliflower
Wash and cut your head of cauliflower. You can boil your cauliflower but due to time I like using this silicone microwave steamer my mom bought me from QVC. I put the cut cauliflower into the silicone container, place the lid on top, and put it in the microwave for 4 minutes. And your cauliflower is cooked!
If you don’t have one of these, boiling or steaming your cauliflower is fine. Just make sure you cook it till it’s soft. The softer your cauliflower is, it will make step 2 easier for you.
Step 2: Blend
Place the cooked cauliflower and 1 cup of Almond milk into a blender/ food processor. Blend until it’s smooth. I don’t own a large blender so I used my magic bullet. It takes a longer time because the cups are small, so slowly blend the milk with your cauliflower.
Step 3: Garlic
While your cauliflower is blending, place a medium size pot on the stove. Make sure to have it on the lowest heat setting. Add 1 teaspoon of olive oil and a spoonful of minced garlic into your pot. Sauté that garlic.
Step 4: You’re almost done!
Once your cauliflower mix is smooth, slowly pour it into the pot. Again, since I did this with a magic bullet and was unable to blend the entire head of cauliflower, I had to do step 4 three more times. Get a wooden spoon and stir your mixture.
Step 5: Salt & Pepper Here!!
This is the last step! Grab your hedgehog salt and pepper shakers and put the desire amount you want into your mashed cauliflower. I also put some herbs and spices into my mixture because I found it in my cabinet and I forgot I bought this 2 weeks ago.
