Vegan chicken & cauliflower mashed ‘potato’ bowl. 

Hello everyone!

When I wasn’t vegan one of my favorite things to eat was mashed potatoes topped with chicken nuggets and cheddar cheese. It was one of those bad cheat meals that you have once in a full moon. Sometimes I crave this but because I’m vegan (or plant based), I can’t have it #veganproblems. Instead of moping about this, I decided I needed to be creative and I figured out a way to make a vegan version of this! It’s so good, and I’m very surprised I was able to do this. For my meat-eater followers, are you ready to have your mind blown?!?!?

 You will need:

  • 1 Cauliflower head
  • 1 c. of unsweetened almond milk
  • 1 spoonful of minced garlic
  • 1 tsp of olive oil
  • Salt & Pepper
  • blender
  • 3 Pieces of vegan chicken
  • 1/4 c. of peas
  • 1/4 c. of Corn
  • Daiya cheese

Step 1: Cauliflower head to mashed cauliflower 

A couple of weeks ago, I put my recipe on how to make Cauliflower mashed ‘potatoes’ on my blog. You will need to do this step first. At this time, pre-heat your oven at 350 degrees.

Step 2: Unfreeze your corn & peas

While you’re blending your cauliflower mashed ‘potatoes’, boil your corn and peas. You can use fresh vegetables, but at that time I only had frozen peas. I was naughty on the grocery shopping and didn’t have corn at the time, but the show must go on!

Step 3: Bake your Vegan Chicken Strips

You moved your mashed ‘potatoes’ cauliflower to the pot, your veggies are boiling on the stove, now it’s time to get out the Vegan Chicken Strips. This sounds gross but these taste like any other grocery store chicken nuggets.. Except they’re vegan. I got my vegan chicken strips at Trader Joes.

Place 3 vegan chicken strips on a pan and put it in the oven for 20 minutes.  You will know your vegan chicken strips are done when it changes to a golden brown color.  Don’t forget to stir your cauliflower mashed ‘potatoes’.

Step 4: Layer

The earth’s crust is made out of different layers. So is this vegan chicken and cauliflower mashed ‘potatoes’. When your cauliflower mashed ‘potatoes’ are done, place some into a bowl. Your golden vegan chicken strips are done right? Take them out and cut them up. Place that on top of your cauliflower mash. Now with your cooked peas and corn, you’re going to put that on top.

*FYI: You don’t have to use all of the peas and corn that you cooked, put whatever amount you want.

Step 5: VEGAN Cheese

Get your vegan cheese and sprinkle it on top. My favorite is Daiya cheddar cheese because it melts and it’s SOOO GOOD!

Put your bowl of awesomeness in the microwave and cook it for less than 2 minutes

Step 6: Food Selfie

Take it out of the microwave, take a food selfie and fist bump the air!! You did it!
