Vegan Nachos.

Last Saturday, my family and I went to a Dodgers vs Giants game! My dad is a huge Dodgers fan so we knew this would be the perfect Father’s Day gift for him.  The last time I went to Dodgers Stadium, was 5 years ago so their food menu has changed. They offer vegan friendly foods like veggie burgers, hummus and veggie dogs but the one food item I was craving was nachos. I obviously couldn’t have it so I waited till I got home to make my very own Vegan Nachos!

You Will Need:

  •  Daiya Cheddar Shreds
  • Garden of Eatin Chia Seed Corn Tortilla Chips
  • 1 Ripe avocado
  • 1 Tomato
  • Black beans
  • Cayenne pepper

Step 1: Microwaveable bowl + Chips

Get a handful of chips and place it in a microwaveable friendly bowl

Step 2: Orange is the new Black Beans

One of my sources of protein is black beans. You can use whatever type of bean you want but I like black beans for this recipe. Open the can, drain the beans, rinse it under some water and scatter it on top.

Step 3: Vegan Cheese that sh*t

I’ve talked about this brand quite a lot so I won’t go into details why I picked this vegan cheese. Grab a handful of vegan cheese and place it on top. If it doesn’t look nice, it’s ok… it’s nachos

Step 4: Microwave 

With your microwaveable bowl filled with chips, black beans and vegan cheese, put it in the microwave for 2 minutes. Make sure you don’t burn your vegan cheese!

Step 5: Dice

While that’s in the microwave, dice your avocado and tomato. I used the entire tomato, but for the avocado I only used a half. If your avocado is super soft, make it into guacamole!

Step 6: Avocado + Tomato + bowl of awesome= 

Now that your cheese is melted, your going to put your diced tomato and avocado on top. If you want a kick of spice in your nachos, add some cayenne pepper on top! Don’t add too much though, cayenne pepper is hot

Step 7: EAT!

And you’re done! Super easy right? I wouldn’t say this is healthy, but it’s a great alternative if you’re vegan. If you want to add more, I would add some olives, vegan sour cream and green onions to this. I obviously wasn’t well prepared but this still taste amazing!   1. Well, there’s good news & bad news. The good news is that Dodger Stadium does offer vegan nachos! The bad news is they began offering them in the Spring of 2015, so you could have had the nachos you were craving at the actual stadium. Good to know for next time. =)
