Vegan Broccoli Mushroom Fettuccine Alfredo.

Hi Everyone!

I love pasta and pasta hates me.. A very sad love hate relationship is going on. When I first went vegan, I was really craving Fettuccine Alfredo. Bad news for me, that’s not vegan. So I went on an experiment food challenge to create fettuccine sauce. I’ve finally found the recipe to make vegan broccoli mushroom Fettuccine Alfredo and I just want to share it with you! 🙂 Before we begin, this recipe is not for those with nut allergies, so sorry about that.

You will need:

  • 1 cup of almond milk
  • 1/2 cup of cashews
  • 1 teaspoon of minced garlic
  • 1 tablespoon of olive oil
  • handful of mushrooms
  • 1 head of broccoli
  • salt & pepper
  • Spaghetti Noodles (I didn’t have noodles, so I am using udon noodles for this)

Step 1: Blend

Blend the cashews, almond milk and minced garlic. You want the sauce to be creamy so if it’s watery, add more cashews.

Step 2: Boil Noodles 

While you’re blending you three ingredients, boil your spaghetti noodles. I ran out of noodles and the only noodles I had were thin udon noodles. It tasted fine, but I would stick with spaghetti noodles.

Step 3: Cut & Cook Veggies

Cut up your mushrooms and broccoli. I like my broccoli steamed; I used my microwaveable steamer for 2 minutes.

Step 4: Sautéed Mushrooms

With your 1 teaspoon of olive oil, put that and the cut mushrooms into a pan.. So basically sautéed your mushrooms. I have my pan on a medium heat.

Once broccoli and noodles are finished, place those items into your sautéed mushrooms pan. Now put your pan on a low heat (reasons why in step 6).

Step 5: OMG

Remember your mixed cashews? Are they done? Awesome, now put that mixture into the pan. Stir it up. Remember to keep your pan at a low heat! If it’s too hot, it will burn the sauce and washing that is no fun.

Step 6: Salt & Pepper

Just for some flavor I added some salt, pepper, and cayenne pepper (we all know I have a terrible obsession with cayenne pepper). If you still want more of a cheesy flavor, add some nutritional yeast! It’s super flakey and has a cheese flavor.

Now take your food out of the pan and put it into a bowl.

Step 7: Bon Appetite!!!!!!!
