Vegan Veggie Curry.

Hi Everyone!

Are you ready for another food post? I have a super easy, fast and yummy recipe for you! And of course, it’s vegan and I made a spicy dish. For all of my spicy lovers, you gotta try it 🙂 Let’s do this!

You Will Need:

  • Maya Kaimal Vindaloo Curry
  • 1 cup of diced onions
  • 1 cup of sliced zucchini
  • 1 cup of diced mushrooms
  • 1 cup of chopped carrots
  • olive oil
  • garlic salt
  • cayenne pepper
  • coconut milk
  • Bowl of steamed white rice

Step 1: OIL

Get a large pan and put some olive oil in it. Make sure the stove’s temperature is at a medium high heat.

Step 2: “FRY”

Now that the oil is warm, put all of your chopped veggies in the pan. Basically stir-fry your veggies. I didn’t have minced garlic but I put a bit of garlic salt.


Step 3: MIX

Once the veggies are done, add/ mix the curry in the pan. You’ll know it’s done with the curry has a thicker consistency. I felt that I didn’t have enough curry so I added some coconut milk. And since I’m a cayenne pepper addict, I added some to my curry when it was done.

Step 4: EAT

Grab your bowl of white rice and put your curry veggies on top. Bon Appetite!

If you have cauliflower, you should definitely add it into your dish! If you want more protein in your curry, put some garbanzo beans. You don’t have to add these extra items but it’s just a thought 🙂

    We’re all big fans of curry in my house – vegetarian curry, especially.
