Well I officially suck at blogging. I used to be so good with my weekly scheduling and then poof! I don’t know what happened. I would blame Pokemon Go but that’s partially the reason I’m not blogging as much. I just need to stop making excuses and get back on that blogging grind. So the best way to get back on my blogging game is to go back to my roots and that’s vegan food!
I’ve been obsessed with the Starbucks Pink Drink this summer! To me, it tastes like a strawberry Starburst and I know that sounds super basic but it’s true. I’ve been trying to manage my money better and I noticed that I’ve been buying this drink way too much. I decided I need to make my own pink drink but with a twist… It’s over 100 degrees right now so why not combine this recipe into a popsicle! To make it even better, it’s vegan! Are you ready?
You Will Need:
- A box of strawberries
- 1 cups of Coconut Milk
- 1 1/2 Tablespoons of Agave Nectar
- Popsicle Tray/ Mold
- 1/4 of a can of Coconut Cream
Step 1: Cut Strawberries
Grab your box of strawberries and cut the ends off. Next, grab a handful of them and start slicing them. When you’re done, place the sliced strawberries in the bottom of your popsicle tray/ mold.
(Side Note: I got my popsicle tray at World Market but they probably have cheaper ones at Marshalls or Home Goods)
Step 2: Mix your ingredients
The first time I made this, I blended the strawberries, coconut milk and agave however the texture was too runny. It needed to be thicker so I added (barely) 1/4 of a can of coconut cream. Blend until smooth.
Now I don’t own a blender but I do have a magic bullet and I thought that would work… I was wrong, use a blender. When you add the coconut cream into the mixture, you definitely adding a lot more liquids and this one is a lot thicker. I had to pour two magic bullet cups into a bowl and use a mixer! Learn from my mistakes, use a blender.
Step 3: Mold and Freeze
Pour blended mixture into your popsicle mold and stick it into the freezer. Freeze it overnight and wake up to a sweet treat!
Step 4: Enjoy!
