Last year, I hopped on a plane to Barcelona, Spain. While I was on a 24-hour flight, my family was safely on the ground celebrating 4th of July. I don’t regret flying out on a holiday.. I do however regret falling asleep with my mouth open, making me vulnerable getting my picture taken by my friend.
This year I’m sadly not traveling to Europe but I will be celebrating 4th of July in the States! So technically, this is my first 4th of July as a plant based eater (aka vegan)! I’ve been trying to figure out a way to make something for 4th of July and I came across this recipe from Jo Cooks; Jo made these adorable corn dogs that I knew it would be perfect for 4th of July and I wanted to recreate it with a vegan twist. Let’s go!
You will need:
- 6 Tofurky Dogs
- 1/2 cup of flour
- 3/4 cup of cornmeal
- 1 cup of Almond milk
- 1 tablespoon of baking powder
- 1 teaspoon of sugar
- salt and pepper
- Canola Oil
Step 1: Cut the Dog
Cut your tofu dogs in half; I am using Tofurky Dogs. This is one of my favorite meatless brands and this is the closest thing to actual hot dogs.
Step 2: Canola Oil
Jo put her oil in a Dutch Oil but I just put mine in a medium size pot. Just fyi, it worked out perfectly! Make sure to have the oil at a medium high heat.
Step 3: Mix
Mix all the ingredients into a bowl; it should look like this. Jo Cooks put hers into a magic bullet which is another easy alternative.
Step 4: Dip
Grab your cut up vegan hot dogs and put them into the mixture bowl. You want to cover your dogs as much as possible.
Once its completely covered, (carefully) place it into the hot oil. Don’t place all of it in at the same time; I would do at least two or three corn dogs into the pot.
*BE CAREFUL, THE OIL IS HOT!
Step 5: Move/ Transfer
You will know when the corn dogs are done when it starts to float up and it’s a golden shade. Scoop out the mini corn dogs and let it cool on a plate with a paper towel.
Step 6: Bon Appetit!
And we’re done! This recipe was so yummy, even my friend Sara liked it and she’s not vegan!
